அரிசி என்பது ஓர் உணவு தானிய வகையாகும். நெல் என்னும் பயிரின் முற்றிய விதையை உடைத்த பிறகு கிடைப்பது அரிசி. நெல் என்பது உயிரியல் வகைப்பாட்டிலில் ஒரைசா சட்டைவா (Oryza sativa) ( ஆசிய அரிசி) அல்லது ஒரைசா கிளாபெரிமா (Oryza glaberrima) (ஆப்பிரிக்க அரிசி) என்று அழைக்கப்படுகிறது. ஆசியாவில் அதிகமாக பயிரிடப்படுகின்றது. அரி என்பதன் பொருள் அரிசியாகும்.
ஆசியாவில் நெல் சாகுபடி கிமு 4500 க்கு முன் பல நாடுகளில் ஒரே நேரத்தில் தொடங்கியதாக கருதப்படுகிறது. மேற்கூறிய இருவகை நெல் இனங்களின் பொதுவான முன்னோடி என்னவென்றால் அது தான் காட்டு நெல் இனம் ஒரைசா உருஃபிபோகன் (Oryza rufipogan) ஆகும். ஆசிய நெல் சிற்றினம் இமயமலை அடிவாரத்தில் தோன்றியதாகக் கூறப்படுகிறது. இந்தியப் பகுதியில் ஒரைசா சட்டைவா இந்திகா (Oryza sativa var. indica) வும், சீனப்பகுதியில் ஒரைசா சட்டைவா சப்போனிகா (Oryza sativa var. japonica) வும் தோன்றயது.
அரிசி என்பது முதன் முதலில் தென்கிழக்காசியாவில் தோன்றியது. இது ஈரநிலங்களில் வளரக்கூடியவை. நெற்பயிர் சராசரியாக ஐந்து மாதங்கள் வரை வளரக் கூடிய ஓர் வருடாந்திர தாவரமாகும். இப்பயிரின் விதை உமி என அழைக்கப்படும், மேலும் அதன் மேலுறை நீக்கப்பட்ட பின் உணவாகப் பயன்படுத்தப்படுகிறது. இவ்வாறு மேலுறை நீக்கப்பட்டவை தான் அரிசி என்று அழைக்கப்படுகிறது.
